THE TRADITIONAL CONVECTIONS OR DEVICES

The traditional convection oven is equipped with lower and upper heat. A hot air furnace has the additional advantage that the hot air in the oven is moved by a fan, which ensures that the air in the oven reaches a high speed. As a result, the heat in the hot air oven is the same and every product in the oven produces the same color and taste in cooking. On average, the preparation time or the cooking temperature can be reduced by 15%. A hot air oven is the ideal oven for patisserie and bread products. However, using a core temperature gauge, the hot air oven is also ideal for frying: the goodness of the products is good to monitor.

THE WHITE OR CONVECTIONS WITH FOOT-INJECTION

The hot air oven / convection oven with moisture injection works the same as the traditional oven. Only steam or the program setting (depending on the model) can be added to the product / in the oven chamber. Ideal for cooking meat, poultry, game and fish dishes, but also for cooking and baking vegetables, potato, pastry products.

Service and maintenance

It is important to clean your oven or steamer properly and check it regularly. Regular maintenance avoids most malfunctions, improves performance of your equipment, and more efficient power consumption. Regularly clean the door rubbers of your equipment. In addition to the hygiene aspect, regular cleaning keeps the rubbers from breaking or tearing.

Gas oven? Take care of fire safety and fresh air

When choosing a gas oven it is important that the burners meet the environmental requirements. Therefore, always clean the burners and ensure fresh air supply. This promotes the life of your equipment and is also healthy for the kitchen staff. Air change is also essential for the pumps, fans and the engine that drives the oven. Also check the air intake grills regularly for dust. Regularly clean the suction filters for longer engine life and a clean exhaust duct. This also benefits fire safety.

Water softeners

Keep an eye on water management. Did you know that 1 mm of lime on a heating element increases the energy consumption by about 10%? It is therefore advisable to purchase a water softener to extend the life of your equipment. Regularly check your water softener on the amount of salt.
